What a buffer does
The rumen works best in a mildly acidic, stable range. Heavy grain feeding, lush low-fibre fodder, or poor cud chewing push it more acidic; the animal responds with reduced appetite, loose dung and depressed milk fat. Sodium bicarbonate — plain baking soda — is a buffer: it neutralises some of that extra acid, nudging the rumen back toward stable. Nothing magical; the cow's own saliva is the same chemistry, produced naturally by the tonne when she chews enough fibre.
When it genuinely helps

Typical supportive amounts used in dairy practice are modest — tens of grams per day for an adult cow, mixed into feed, not handfuls. Introduce gradually; ask your vet or feed advisor for the right amount for your case.
When it's a band-aid
If dung is consistently loose, fat is chronically low and appetite erratic, the underlying story is usually a ration problem: too much grain per meal, too little effective fibre, too-fine chaffing, or sudden feed swings. Pouring soda on top treats the symptom while the cause keeps costing you. Fix the base first — adequate dry fodder, sensible chaff length, concentrate split into multiple feeds and matched to yield — and most "needs soda" situations disappear.
